01 / ABOUT THE PLACE

About this place

A clear soy-sauce broth topped with deep-fried crickets yields a roasty, crustacean-like savor in the bowl of cricket ramen, the signature dish at Nihonbashi Bakurocho's ANTCICADA. The soup combines two varieties—two-spotted crickets and house crickets—and compounds their flavor across the seasoned shoyu tare and aromatic finishing oil, drawing on roughly 160 insects per bowl. Deep-fried toppings provide a crisp bite akin to small fried shrimp, rounding out a deeply layered, broth-forward meal.

The side dishes display similar ingenuity. The silk sausage molds silkworm pupae into the shape of a cocoon, blended with fresh cream and egg white for a remarkably smooth texture. There is also insect tsukudani, simmered in soy sauce and sugar, featuring crickets seasoned with ginger, grasshoppers with shiso and green chili, and silkworms accented by pistachio and cardamom to accentuate each insect's natural traits.

Drinks and desserts explore fragrant insect profiles just as thoughtfully. The bar pours Tagame Gin, a craft spirit distilled from male giant water bugs to highlight their naturally fruity aroma, alongside a highball dubbed the Tagahai. Non-alcoholic options include house-made water bug craft cola and chilled sanshacha, a tea brewed from silkworm droppings that carries the delicate herbal fragrance of the mulberry leaves the insects feed on. To finish, house-made silkworm gelato offers a cool, gentle sweet course.

Behind a door with a wooden handle, the dining room is styled with specimens and glass jars surrounding a U-shaped counter. On designated ramen service days, diners can drop in without a reservation, making it an approachable stop for solo meals or an eye-opening exploration into unexpected culinary ground.
